The Future of Food

I came across this article quite a while ago with the intention of posting it here, but just recently have a renewed sense that it is mostly very true.

asks experts in the food field what they think the future of food holds and many of them, even if in a joking manner, offer a picture of the culinary world that is low-fat, low-cholesterol, and long-lasting. One of the experts comments that all fish will be farm-raised, which is what struck me today when I was watching Happy Feet with my children (*sidebar...it is a very good movie despite its political push), in which the penguins are affected by humans over-fishing the waters and so I think there is a bit of truth to this point.
I personally feel that there will be a movement for most food products including fish, proteins, and produce to come from organic, local farms. Not only because more and more people are becoming aware and educated and therefore concerned about the pesticides and methods used to produce mass quantities of produce and protein items year-round, but also because the increasing prices of gas which places a surcharge on food deliveries which means an increase in menu prices will force restarateurs to shop locally. These two main factors, combined with some other minor factors like the hope of maintaining small local community economies by feeding its agriculture, will lead to a "Back to the Farm" movement among foodies today.

ACF National Conference and Competitions
Topic: Hot Food Team
Hi everyone,
I haven't posted to the blog in a while and that's because I have been away. I had the pleasure of attending the ACF National Conference with my colleague Chef Tom Recinella who is the coach of the SUNY Delhi ACF Junior Hot Food Team. As you know, I have been helping out and this past weekend was our triathalon, if you will.
We drove almost straight back from Orlando and arrived in Delhi at 3:30 pm yesterday....phew. Monday night was the President's Gala and awards ceremony. Well, we didn't come in first place, but we did bring home a silver medal from a national competition! And our Youth Team who was competing in the Youth Team USA 2008 tryouts brought home a bronze medal!
We are all so proud of the many hours of hard work put forth by these students! And we can't wait to do it all again next year!

Cutting Calories in a new way

So, I'm on a mission this summer to lose weight and get in shape....yeah, we've all been on that mission....and I've been on it for about three years now! This just in: how many calories are you drinking in your coffee? I found this website and thought about how much coffee I drink (with fat free flavored creamer)....wow! I calculated that if I cut out the creamer from my coffee I could save 27,375 calories a year (3 cups a day w/ 1 tbsp creamer (25 cals) for 365 days)!!!
So, since I can't drink black coffee (believe me, I've tried), I am going to cut back on the coffee I drink, I tried switching to herbal decaf tea with nothing, but after a week with no coffee I decided: I love the taste of coffee too much (and the caffeine)!

Hot Food Team

This summer, I have the exciting privelege to be working with SUNY Delhi's Junior Hot Food Team and Youth Team. These remarkable eight individuals have endured a lot of hard work, criticism, and long hours to get to this point: a shot at the national title.
The hot food team won the ACF New York State title, the ACF Northeast Region title, and are now competing against three other teams in hopes of becoming the ACF National Champions in hot food competition. In July, they will be preparing 24 portions of a four-course menu (appetizer, salad, entree, dessert) in only 3 hours and 20 minutes (production time) and 40 minutes (plate time).
They have already had their dished critiqued by three CMC's (Certified Master Chef), one CMPC (Certified Master Pastry Chef), and numerous other professionals in the culinary industry. We have received wonderful feedback and changed several things in recipes and plating....we want to win! I will try to update you all on our progress and post some pictures of the plates. Wish us luck in Florida!
